Scandinavian Pastry
Beat well:
     2 eggs
add :
    3/4 cup 105 - 115 degree water
dissolve into this mixture:
    1 package active dry yeast
Let all these ingredients rest refrigerated for about 15 minutes, meanwhile, blend with a pastry blender or by hand:
    4 cups sifted all purpose flour
    1 teaspoon salt
    2 tablespoons sugar
    1/2 cup butter
    10 crushed cardamom seeds or 1 1/2 teaspoons powdered cardamom
In a large mixing bowl, make a ring of the blended flour. Pour the chilled yeast mixture into the center and work it gradually into the dry ingredients . Knead until smooth, about 2 minutes. Form the dough into a ball and rest it, covered for about 20 minutes in the refrigerator. Roll out the dough -> lightly into an oblong about 3/8 inch thick. Beat until creamy:
    1 1/3 - 1 1 /2 cups butter
Fold the butter into the dough a  little at a time by spreading it onto the dough and folding the dough into thirds again and repeat this process until all the butter had been completely mixed into the dough. Cover and chill for at least 4 hours. Then roll it out again on a slightly floured surface to the thickness of 3/8 inch. Cut off and folded edges that might keep the dough from expanding. To shape into a ring , first roll it into an oblong about 29  x 11 inches. Fill it with any rich filling for a  coffee cake. Bring the two ends together and seal with a little water. Place the ring onto a greased baking sheet. Cut the roll every 1 - 2 inches starting with the outer edges of the ring, DO NOT CUT COMPLETELY THROUGH THE RING! After you have cut then take each section and give it a half turn twist, and do all the rest the same way. Brush the top with an egg wash.. basically one egg with some water added and brushed onto dough before baking. I personally used an egg, milk, and powdered sugar to give the outside a slightly sweetened taste.
Let rise about 25 minutes or until doubled in bulk. I baked mine at 350 degrees until the top was a nice golden brown and approximate time of ...........30 - 45 min.

Cocoa Mix
    1 cup cocoa
    2 cups sugar
    6 1/2 cups dry milk
    1 1/2 teaspoon salt
Mix thoroughly and use with hot water or cold milk.


Baking Powder Biscuits
    2 cups flour
    4 teaspoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon cream of tarter
    1 tablespoon sugar
    1/2 cup shortening
    2/3 cup milk
Heat oven to 400'  Bake for 10 -12 minutes on an ungreased baking sheet.
 Mix first 5 ingredients in a large bowl. Add shortening then add milk and stir. Put dough on bread board and cut.
* Be sure dough is 1/2' thick for best results *


Missouri Mix (Bisquick equivalent)
    9 cups flour
    1/3 cup baking powder
    1 cup + 1 tablespoon dry milk
    4 teaspoon salt
    1 3/4 cup shortening
Mix dry ingredients together, cut in shortening till well mixed.
Makes 13 cups of mix. Will keep for length of time in airtight containers.
Use in recipes calling for Bisquick.

Substitutions can be made here like:
4 cups whole wheat flour, 5 cups white flour
4 cups cornmeal, 5 cups white flour (When using this variation, double the baking powder so that it rises correctly, since corn is heavier than white flour.) This then works great for quick corn pancakes & quick corn bread!

Basic Muffins
    2 cups  M.M. (Missouri Mix)
    4 tsp. sugar
    1 egg
    2/3 cup water
Mix dry ingredients, then add egg and water. You might want to add up to 1/2 cup sugar for a sweetened taste.
Bake @ 400' for 20 minutes.


Missouri biscuits
    2 cups M.M. (Missouri Mix)
    1/2 cup water
    1 tbsp. sugar
Mix the same as regular biscuits.
Bake @ 400' for 10 -12 minutes.


Corn bread
    1 cup cornmeal
    1 cup flour
    4 tsp.. baking powder
    1 tsp. salt
    2 eggs
    1 cup milk
    1/4 cup melted shortening
Mix dry ingredients, in another bowl mix eggs, milk, shortening. Mix in dry ingredients stirring all till moist. Pour into a well greased pan 9x9x2.
Bake @425' for 20 -25 minutes.


Impossible pie
    4 eggs
    1/2 cup sugar
    3 tsp. butter
    1/2 cup M.M. (Missouri Mix)
    1 tsp. vanilla
    2 cups  milk
    3 oz. coconut
Put all ingredients into a blender  for 30 seconds. Pour into a well greased 9 1/2 or 10' pie pan. Bake @ 400' for 30 minutes. Makes its own crust, filling & topping. Serve with ice cream or just plain. I think that this also makes a great meal ... I never have any trouble getting my kids to eat all their dinner!


Glorified rice
1 cup cold cooked rice
1/2 cup sugar
1 1/2 crushed pineapple (drained)
1/2 tsp. vanilla
1 cup whipped whipping cream
8 large marshmallows - cut up
Mix all ingredients and chill very thoroughly before serving.
Makes 6 -8 servings.
